Dates are an important agricultural and food-processing raw material in the Middle East. For this project, the customer plans to process dry dates into date paste through a complete processing system.
The proposed production capacity is approximately 1 ton per hour. The process starts with dry date handling and washing, followed by pretreatment to soften the fruit, pitting and pulping, fine grinding and homogenization.
The final date paste is intended for packaging in 500g, 1kg and 5kg formats. The exact packaging machine will be selected after the customer confirms the final pouch structure and packaging style.
Project Overview
The project is designed around the following processing concept:
Dry Dates → Conveying → Bubble Washing → Sorting → Steam Pretreatment → Dewatering → Conveying → Pitting and Pulping → Storage → Colloid Milling → High-Shear Homogenization → Packaging
The main purpose of the pretreatment stage is to soften the dry dates before the pitting and pulping process.

Raw Material Handling and Bubble Washing
The production line begins with a stainless steel conveyor system designed for approximately 1T/H capacity.
The dates are then transferred to a bubble washing and lifting machine.
The washing system uses a bubble-generating device to keep the material in a rolling condition during cleaning, helping remove impurities from the surface of the dates. The equipment is made from SUS304 stainless steel and includes a lifting section for transferring the cleaned material to the next stage.
After washing, the dates move to a sorting platform with four working positions.
The sorting stage allows operators to remove unsuitable raw materials before further processing.

Steam Pretreatment for Dry Dates
According to the customer’s requirement, the dry dates need to be softened before pitting and pulping.
The original equipment proposal includes a blanching machine, but the project requirement specifically refers to steam pretreatment. Therefore, the final pretreatment equipment should be selected according to the required softening process.
This is an important engineering point.
The purpose of the pretreatment stage is to make the dry dates easier to process before entering the pitting and pulping machine.
After pretreatment, the material passes through a dewatering and air-drying section before being transferred to the next process.
The equipment configuration should ensure that the dates are sufficiently softened for efficient pitting while avoiding unnecessary damage to the product structure.
Date Pitting and Pulping
After pretreatment, the dates are transferred to a double-channel pitting and pulping machine.
The machine is designed for stone-fruit processing and is suitable for products such as dates, mangoes, peaches and apricots.
For this Middle East project, the equipment performs two important functions:
- Separating the pits from the date pulp
- Processing the softened date flesh into a pumpable paste
The proposed capacity is approximately 1T/H, matching the target capacity of the upstream processing system.
The processed date pulp is then transferred to a 300L stainless steel storage tank through a screw pump.
Fine Grinding with a Colloid Mill
To improve the consistency of the product, the date pulp passes through a colloid mill.
The colloid mill is made from SUS304 stainless steel and is used for further refining the date paste.
This stage helps reduce the particle size and produce a smoother product before homogenization.
After grinding, the date paste is transferred to another storage tank through a screw pump.
The use of screw pumps is suitable for transferring concentrated materials through the processing line.
High-Shear Homogenization
The final processing stage includes a 1,000L high-shear emulsification and homogenization tank.
The tank is made from SUS304 stainless steel and uses a three-layer electrically heated structure.
The high-shear system provides intensive mixing and homogenization of the date paste.
This stage is important for improving the uniformity of the finished product before packaging.
The proposed processing sequence is therefore:
Date Pulp → Fine Grinding → High-Shear Homogenization → Finished Date Paste
Main Processing Equipment
The main equipment included in the proposed project is summarized below.
| Processing Stage | Main Equipment | Capacity / Specification |
|---|---|---|
| Raw Material Feeding | Conveyor | 1T/H |
| Washing | Bubble Washing and Lifting Machine | 1T/H |
| Sorting | Sorting Platform | 4 working positions |
| Pretreatment | Steam Softening Equipment | To be finalized |
| Dewatering | Dewatering and Air-Drying Machine | Included |
| Pitting | Double-Channel Pitting and Pulping Machine | 1T/H |
| Storage | Stainless Steel Tank | 300L |
| Transfer | Screw Pump | Approx. 3T/H flow |
| Fine Grinding | Colloid Mill | Model 180 |
| Homogenization | High-Shear Emulsification Tank | 1,000L |
The main processing equipment is based on the supplied project proposal, including the 1T/H conveying, washing, sorting and pitting/pulping sections, followed by storage, colloid milling and high-shear processing.
Packaging Requirements for Date Paste
The customer plans to package the finished date paste in:
- 500g
- 1kg
- 5kg
The project proposal currently identifies a stainless steel screw extruder before the packaging stage.
However, the final packaging machine has not yet been determined because the exact pouch structure still needs to be confirmed.
The source information indicates that the customer is considering a plastic three-side-seal pouch, but this packaging format remains to be finalized.
Therefore, the final packaging equipment should be selected after confirming:
- Pouch material
- Pouch dimensions
- Three-side seal or other pouch structure
- Product weight
- Required packaging speed
- Filling method
This confirmation is necessary to ensure that the packaging machine matches the viscosity and flow characteristics of the date paste.
Why Process Integration Matters
A date paste production line should not be designed as a collection of independent machines.
Each processing stage affects the next.
The washing system influences raw material cleanliness. Steam pretreatment affects the softness of the dry dates. The pitting and pulping system determines how efficiently the fruit flesh is separated from the pits. Fine grinding and high-shear homogenization influence the final texture and consistency of the date paste.
For this Middle East project, the proposed equipment follows a continuous process structure:
Cleaning → Softening → Pitting → Pulping → Grinding → Homogenization → Packaging
This configuration provides a clear production path from dry dates to finished date paste.
Key Technical Points Before Final Equipment Confirmation
Before the final production line is manufactured, several details should be confirmed.
1. Steam Pretreatment Method
The customer requires steam softening, while the preliminary equipment list includes a blanching machine.
The final pretreatment equipment should therefore be confirmed according to the required steam process.
2. Date Raw Material
The variety, moisture content and hardness of the dry dates should be considered when confirming the processing parameters.
3. Final Date Paste Consistency
The required texture will influence the operating conditions of the colloid mill and high-shear homogenization system.
4. Packaging Format
The customer requires 500g, 1kg and 5kg packaging, but the final pouch structure still needs confirmation.
The packaging machine should be selected only after the bag design and sealing method are finalized.
5. Final Production Speed
The upstream processing capacity is approximately 1T/H, while the final packaging speed should be matched to the selected package weights.
A Complete Date Paste Processing Solution for the Middle East
This project demonstrates a practical approach to date paste processing for customers in the Middle East.
The system is designed to process dry dates through washing, steam softening, pitting, pulping, fine grinding and high-shear homogenization.
The main processing equipment uses stainless steel construction, including SUS304 material for the major food-contact equipment.
The final production line can be configured around the customer’s raw material, finished-product consistency and packaging requirements.
By confirming the pretreatment process and final pouch design before manufacturing, the project can move from dry date preparation to finished packaged date paste through a coordinated production system.
